What is the difference between wet and dry pemmican?

Traditional dry pemmican removes moisture from the meat before combining it with rendered fat. Controlling moisture is central to shelf stability. We measure water activity during production to verify that the finished bars meet our internal standards.

What beef and tallow are used in the Everyday Bar?

What is the sugar source?

Why do the bars contain more fat than a typical protein snack?

Why use beef instead of a protein isolate?

No. Shelf stability comes from the preparation process, low water activity, and protective packaging—not from conventional preservatives or plastic stabilizers.

Why does the OG Carnivore Bar have more fat than protein?

Because it is pemmican, not a protein bar. Fat is the point. It burns slow, keeps you full for hours, and does not spike you and drop you. Lean protein alone doesn’t do that. If you eat keto, carnivore, or animal-based, this is the ratio you’re likely eating. If you just eat real food, this is what a meal looks like when there is no kitchen.

Who is the Carnivore Bar for?

You eat high-fat, moderate-protein, and little to no carbohydrate. You read labels. You want food that resembles what humans ate for thousands of years, not something reverse-engineered in a lab. Keto, carnivore, and animal-based eaters are our people. But so are people who want nutrient-dense, real food options on the go. Not for you if you want a low-calorie, high-protein, sweet snack bar. That is not what we made.

What does the Carnivore Bar taste and feel like?

Beefy, savory, and rich. It’s not gamey or jerky, and it’s nothing like a candy bar. Apple Pie and Honey Salted carry a hint of sweetness from raw honey and real fruit.

The texture is soft and dense, closest to a thick nut butter, with a light crumble. Very fatty on purpose. Some love it on the first bite. Others need two or three bars before it clicks, and those are usually the ones buying by the case.

The crisp beef is suspended in soft, buttery tallow. Not chewy like jerky, not crumbly. This is where the OG sets itself apart from the Everyday Bar.

What is the best way to eat my first bar?

Room temperature if you want soft and chewy. Cold from the refrigerator makes it more solid. You can get the best of both worlds by taking it out of the fridge and warming it in your hand for a couple of minutes. The texture tastes buttery and delicious.

What is the difference between the Everyday Bar and the OG Carnivore Bar?

Same pemmican. Different pedigree.

The OG Carnivore Bar is our 2 oz flagship: grass-finished, regenerative beef from farms in North Carolina and Virginia, ancient sea salt, organic ingredients, sourced with no expense spared and priced accordingly.

The Everyday Bar is the 1 oz version, built so you can eat it every day. Conventional beef tested clean, grass-finished tallow, and fat rendered a little hotter for a rounder, beefier flavor and a smoother bite.

Both are true pemmican. One is a splurge, one is an everyday treat.

How long does it last? Does it need refrigeration?

25 years on a shelf. There is no need for refrigeration, water, heat, or any kind of prep. Open it and eat. Meat spoils from moisture and oxygen, so we remove nearly all of both. USDA identifies 0.85 water activity as the threshold at which mold and bacteria grow. We verify every batch on a meter and run it under 0.3.

In heat (such as arriving in the mail to your door!), the fat can soften. This is normal and harmless. Place it in the fridge or keep it cool at room temp and it will firm back up.

Are there any shelf stabilizers or preservatives?

No. We use zero preservatives, fillers, or any junk. We create shelf stability in the way hunter-gatherers did for thousands of years.

Why use beef rather than whey, collagen, or beef isolate protein?

Because whole muscle meat is food and isolates are ingredients.

Real beef gives you a complete amino acid profile in the form your body is built to use, plus what powders leave behind: B12, heme iron, zinc, choline, and L-carnitine, all necessary for optimal human functioning.

There is also a labeling trick worth knowing. Protein is measured by nitrogen, so a brand can add cheap free-form aminos like glycine or taurine and watch the label number climb while the food gets worse. Don’t fall for it. We use beef instead.

What kind of sourcing do you use for the beef and tallow?

100% grass-fed and finished U.S. beef with nothing added, tested free of antibiotics, paired with grass-finished beef tallow. Tallow is where healthy fats like CLA, stearic acid, and trace amounts of omega-3s come from.

Is this keto and carnivore approved?

Yes. Salted is zero carb and strictly carnivore. Beef, tallow, salt. Apple Pie and Honey Salted are animal-based, sweetened only with raw honey and real food, and fit a low-carb day.

Will the Carnivore Bar spike my blood sugar?

Not the way a snack bar will. Salted has zero carbohydrates and nothing to spike.

In the flavored bars, a small amount of raw honey is encased in a large amount of fat. Fat blunts both the rise in glucose and the insulin response that follows. That is designed, not accidental.

What is your shipping and return policy?

Every sale is final: no refunds, returns, or exchanges. The exception is a confirmed manufacturing defect. Read the complete shipping and return policy before ordering.

We currently ship within the United States. Meat products are highly regulated across borders, and we cannot reliably guarantee delivery through every country’s import process.

Why are there crunchy pieces in the bar?

The crunch comes from dehydrated beef. It is a normal result of the drying process. The tallow creates the contrasting creamy texture.

My bars are soft or melted. Are they bad?

No. Carnivore Bars are shelf-stable and do not require refrigeration. Warm temperatures can soften the tallow without changing the product’s intended shelf stability. Refrigerate the bars if you prefer a firmer bite.

What kind of salt do you use?
