Tallow, a traditional cooking fat derived from beef or sheep, has been a staple in many cultures for centuries. Despite its long history, many people today need to become more familiar with this versatile and nutritious ingredient.

Here's why fat is worth adding to your diet.

  • Rich in nutrients: Tallow is high in essential fatty acids, including monounsaturated and saturated fats. It's also high in vitamins A, D, and K2, which help maintain a healthy immune system, strong bones, and heart health.

  • Stable cooking fat: Tallow has a high smoke point, making it an excellent choice for cooking at high temperatures. Unlike vegetable oils, which can break down and produce harmful free radicals when heated, tallow remains stable and safe for cooking. Those free radicals are also an element of spoilage. Those PUFA fats have been deodorized so you can't smell the rancid fat rotting. They should never be used in cooking. Tallow or other saturated fats are the only lipids that can stand up to the heat.

  • Supports healthy gut flora: Grass-finished tallow specifically is rich in conjugated linoleic acid (CLA), a type of fat that has been shown to help beneficial gut bacteria. A healthy gut is essential for general health since it aids nutrition absorption and disease resistance.

  • Supports brain function: The healthy fats in tallow are crucial for brain function, helping to improve memory, concentration, and mental clarity. Your brain is 25% cholesterol by dry weight. Don't skimp on it for your brain's sake.

  • Promotes weight loss: Studies have shown that diets high in healthy
    fats, that are evolutionarily consistent, can help encourage weight loss by reducing inflammation and increasing feelings of fullness. Nothing solves a caloric deficit better than satiation. If you're full you can stay on a diet. If you're starving yourself for nutrition, your will power will eventually give out. Don't risk it! An animal based ketogenic diet with tallow at the center of it is a way of eating that people can really stick to long term.

Tallow can be used in various ways, from frying eggs to making your own pemmican in your own home. It's also an excellent substitute for butter or margarine in baking if you feel up to trying any of those fun carnivore recipes you see on social media going viral like "Chaffles" or "Carnivore Pizza Dough". Your imagination is the only limit. Just make sure to use healthy ingredients when you experiment, healthy fats being the most important.

To get the most out of this traditional fat, look for high-quality tallow from grass-fed animals and use it in moderation as too much can make you a little nauseous. Go slow. Listen to your body and an ancestrally in tune doctor. Our favorite is Dr Ken Berry.
