½ cup cacao chips or dark chocolate chips

8 large medjool dates

Line a baking tray or pan with parchment paper. De-pit each medjool date and open them up so they lay flat. Cover with another piece of parchment paper, then use a rolling pin (or a glass jar) to gently press down on each date until you have flattened discs. Remove the top layer of parchment and set aside. -
Make the coconut tallow filling:
In a small saucepan over medium heat, toast the coconut butter until it melts and turns aromatic and slightly golden.
